Workshop: “Ensure Honey Authenticity”
Food Authenticity is receiving growing attention, also due to increasing pressure from consumers, who are demanding not only safe, but also authentic and pure food products.
In case of honey, it is not about sugar syrup only, as there is the knowledge about the importance of bees to food security and ecological sustainability. The flood of cheap and adulterated honey has caused collapse in raw honey prices, which in turn is a threat to the viability of honest beekeepers’ industry and the pollination of the crops.

As food fraudsters become more sophisticated and quickly learn how to deceive conventional techniques, there is an increasing need for multi-marker and non-targeted solutions to tackle dynamic fraud.

Lea Heintz, Product Manager and Thomas Spengler Market Manager at Bruker BioSpin will introduce NMR and the Honey-Profiling Method to tackle dynamic fraud in honey.
