Why NMR is the main detection method for food fraud and authenticity at China’s Food Fermentation Research Institute
In recent years, food fraud and food adulteration have increased significantly. The globalisation of the food chain has added new complexities to a product’s journey before it reaches the shop shelves. This has caused increased uncertainty in the food we eat, leading to consumers questioning whether what they read on the product’s label matches the ingredients inside, posing concerns around product authenticity, ingredient integrity, safety and provenance, and undeclared allergens. The reputational damage to a brand is potentially serious.

High-field NMR and global collaboration drive Covid-19 protein research at Göttingen
As part of a 50-strong international collaboration of NMR experts, a team led by Prof. Dr. Markus Zweckstetter at the Max Planck Institute for Biophysical Chemistry in Göttingen, Germany, has been uncovering insights into the hidden workings of Covid-19. Using one of only a few 1.2 GHz NMR instruments in the world, his team is helping to elucidate the structure and interactions of the nucleocapsid protein within the SARS-CoV-2 virus and in doing so, identify promising options for drug targets.

How one of Spain’s most significant wine testing laboratories is using nuclear magnetic resonance to protect the industry
The Estación Enológica de Haro (EEH), located in the La Rioja region of Spain, is an oenological station belonging to the Government of La Rioja. Since its inception in 1892, the laboratory has become one of the country’s most significant wine testing facilities, using the latest technology to analyze Spanish wines. The EEH uses nuclear magnetic resonance (NMR) to obtain insights to quickly determine the origin and constituents in a wine sample. This in turn is helping to tackle the widespread demand for food safety and product certification. Here, Elena Melendez Alvarez and Eva Lopez Rituerto discuss their roles at the EEH and the work they carry out at the oenological station.
