Droplet size distributions (DSDs) play a major role in the development of new products, influencing mouth feel, stability of emulsions, and shelf life. This webinar will present the Droplet Size Analyzer 2.0, an improved software solution for DSDs in food emulsions using minispec, a Bruker TD-NMR system. The new solution introduces a new user interface, GoScan for minispec, and improved data analysis including the calculation of multimodal droplet size distributions.
Droplet size analysis is regularly applied in the production quality control and Research and Development (R&D), where the final goal is to ensure specific characteristics of food products.
September 22, 2022 - 15h CET
The webinar will appeal to food companies and analytical service providers who are associated with development of new formulations and quality control analysis of food emulsions such as mayonnaise, salad dressing, soft cheese (oil droplets dispersed in a water phase), and margarine, low-fat spread, butter (water droplets dispersed in an oil phase).
